TOCINO (Sweet Pork)
Serves 4
Ingredients:
Pork shoulder or pork belly, cut into thin strips | 600 g/1 ⅓ lb |
Coarse sea salt | 10 g/1 Tbs |
Freshly ground pepper | 2 g/1 ½ tsp |
Sugar | 50 g/2 oz |
Garlic, minced | 30 g/1 oz |
Spanish paprika | 3 g/4 tsp |
Pineapple juice | 250 ml/1 cup |
Achuete oil | 45 ml/3 Tbs |
Cooking oil for frying | as needed |
Procedure:
- Mix the seasonings and spices in a bowl and add the pork.
- Add in the pineapple juice and then the achuete oil. Marinate overnight and then drain.
- Portion into 200 gram/7 oz packages. Wrap in parchment paper and store in the chiller or freezer for future use.
- To fry, coat a pan with cooking oil. When the oil is hot, add the tocino, flipping them when each side is cooked.
