PAKBET DAGUPEÑA (A Stew of Vegetables, Northern Philippine Style)
Serves 4
Ingredients:
Cooking oil | 30 ml/2 Tbs |
Onion, diced | 50 g/2 oz |
Tomato, diced | 150 g/5 oz |
Shrimp paste | 6 g/1 Tbs |
Chicharron | 75 g/3 oz |
Aubergine, cut into batonnets | 200 g/7 oz |
Squash, cut into 3 cm/1 in. cubes | 100 g/4 oz |
Ampalaya (bitter gourd), cut into batonnets | 100 g/4 oz |
Okra | 100 g/4 oz |
Finger chilli | 1 piece |
Stock/water | 250 ml/1 cup |
Salt and pepper | as needed |
Procedure:
- Heat the oil and sauté the onion, tomato, shrimp paste, and chicharron.
- Add in the stock, aubergine, and squash. Bring to a boil and simmer until the squash is soft.
- Finish the stew by adding the okra, ampalaya, and finger chilli. Continue cooking until the okra and bitter gourd are cooked but still bright green.
