BAI INACIA´S ADOBO (My Grandmother’s Adobo)
Serves 8
Ingredients:
Cooking oil | 50 ml/3 Tbs 1 tsp |
Garlic, crushed | 50 g/2 oz |
Onion, sliced | 150 g/5 oz |
Pork belly, cut into 2 cm slices | 1 kg/2 lb 3 oz |
Bay leaf | 4 pcs |
Peppercorns, whole | 4 g/2 tsp |
Soy Sauce | 30 ml/2 Tbs |
Mangrove palm vinegar | 160 ml/⅔ cup |
White sugar | 40 g/3 Tbs |
Achuete water | 250 ml/1 cup |
Water/stock | as needed |
Sea salt | as needed |
Procedure:
- In a pot, heat cooking oil and sauté garlic until lightly browned. Add and sweat the onion.
- Brown the pork belly with the garlic and onion. Add the rest of the spices, soy sauce, vinegar, and sugar. Bring to a boil and simmer for about 10 minutes.
- Add 250 ml/1 cup of achuete water and enough water/stock to cover all the meat. Bring to a boil and simmer until the pork is tender and the sauce is thick. Check to season and add salt should it be necessary.
